Garden Fresh Elegance: Arugula & Fig Salad

What makes this salad truly special is the star ingredient: fresh figs harvested from a tree that graces my garden. Each year, as winter approaches, these figs find their haven in a cozy greenhouse, where they continue to ripen until they're ready to be transformed into culinary treasures.

For the Salad:
• 6 cups fresh arugula
• 6 ripe figs, quartered
• 1 yellow bell pepper, thinly sliced
• 1/2 cup crumbled feta cheese
• 4-6 slices of prosciutto, torn into pieces
• 1/4 cup pine nuts, toasted
For the Dressing:
• 3 tablespoons extra-virgin olive oil
• 2 tablespoons balsamic vinegar
• 1 teaspoon honey
• Salt and freshly ground black pepper, to taste
Instructions:
1. Prepare the Dressing: In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, honey, salt, and black pepper. Taste and adjust the seasoning, if needed. Set aside.
2. Toast the Pine Nuts: In a dry skillet over medium heat, toast the pine nuts, stirring frequently until they turn golden and fragrant. Be careful not to burn them. Remove from heat and set aside to cool.
3. Assemble the Salad:
- In a large salad bowl, place the fresh arugula as the base.
- Scatter the quartered figs, thinly sliced yellow bell pepper, and crumbled feta cheese evenly over the arugula.
